I have always said that the area of McAllen/Eagle Pass does not have a decent place to eat. I also have observed that as the area has become more affluent, the viability of a good restaurant is becoming possible. Every time I want to go out to eat or to take a customer or an associate to dinner or lunch I am faced with the same dilemma. I intend to correct all that. I figure that I can open a restaurant and even if it loses money for the first couple of years it will be worthwhile.

For the purpose of launching my endeavor, I contacted my college roommate who is now one of the best chefs in Texas. I estimated the renovations will take four months but just to be on the safe side, construction being what it is; allowances of two more months are figured in. I had her come with Dariel the following weekend and I threw a dinner party at my house. Dariel and Didi were to be the guests of honor and I invited anybody who was important in McCallen, Eagle Pass and the vicinity. Dariel and Didi would have total autonomy and the authority to conduct both the restaurant building and the remodeling of the house. With the restaurant I wanted to have elegance and class and reserved the right to final approval but I had already discussed with Dariel some of the features and décor I wanted. With the employees, I made the decision that they would enjoy the same benefits that all my other employees shared. That was a big step in the insecure business of restaurants. But I told Dariel that even if the hiring and firing was left up to him that I also wanted to share just in case there might be some unusual situation where we might be legally liable. The location was a no brainer; I already owned a nice parcel of land that was zoned commercial just across from Las Aguilas Mall.
